I realized yesterday that maybe I’m not very good at summer. I don’t have any good tan lines, I haven’t purchased any Malibu coconut rum, and I have been known to not be the best at making spontaneous decisions.
I do like summer. I like that it is supposed to be easy and light and fun. I’m supposed to be covered in freckles, have a huge collection of summer dresses, and an “I don’t care” attitude regarding plans or anything serious. I’m supposed to get home from work, not care if I’m eating dinner at 9 PM, and spend the night at the beach sitting around a fire with friends. Sigh. Am I reminiscing about a summer that isn’t even over?
Most times I feel like I’m writing more for myself than for you guys. Sorry about that. Let’s turn this train around. Or heck, maybe some of you can relate to my feelings. Or at least say something motivating to me. Like, “Hey! Get your head out of your ass and go get a tan! Chill out!” Food blogging = therapy. Who knew.
Let’s get to the point. I know it’s what you’ve been thinking. The point is if you want something easy and light and fresh for lunch or dinner these days, I’ve got it. Buy some of those beautiful heirloom tomatoes, a little fresh spinach, and some good cheese. Seriously that’s it. Assuming you have tortillas, that is. And if you don’t, then go get some. Why don’t you have tortillas?
I should have bought those Otter pops I looked at last night in the grocery.
Spinach & Heirloom Tomato Quesadilla serves 1
2 flour tortillas
1 cup shredded cheese, I used a swiss and gruyere mix (and it was perfectly nutty and sweet)
1 cup fresh spinach
1/3 cup heirloom grape tomatoes, halved or quartered (about 5 or so depending on size)
salt and pepper
Spray or drizzle tortillas with olive oil. Assemble quesadilla in pan over medium heat, layering cheese, then spinach, then tomatoes and kosher salt and fresh cracked black pepper. Grill both sides until lightly browned and cheese is gooey. (Did I have to tell you that part?)
